Nose
Lifted passionfruit and grapefruit pith intertwine with green apple and lime aromas.
Palate
Tropical fruits and citrus zest dance around the palate with a crisp zesty acidity providing length.
Season
Following heavy rainfall in June, a cold and wet winter set the stage for optimal soil moisture levels, aiding successful bud-burst and early growth stages. Diligent disease control measures throughout the season were implemented in the vineyard to ensure a healthy crop. Cool nights, sunny days and no severe heat waves throughout summer provided optimum ripening conditions with fresh acidity and lively flavours.
Winemaking
The fruit was harvested in the cool of the dawn, de-stemmed and crushed to the press. The free run and pressing were kept separate. Pressing were fined using vegan friendly pea protein then combined back in with the free run after racking. A cool ferment in tank followed by fining and filtration prior to bottling.
